Powerhouse Pizza Bites 1 Daily Mom, Magazine For Families

“Pizza” doesn’t usually equate to “nutritional powerhouse” but these bites are made with ground cashews and sunflower seeds, which contribute healthy fat and protein. Chia seeds and ground flax give it even more of a boost and – they taste good!

Ingredients:

  • 1 tbsp. chia seeds
  • 2 tbsp. ground flax
  • 1 cup shredded cheese
  • 1/2 cup cashews, ground
  • 1/4 cup sunflower seeds, ground
  • 3 tbsp. olive oil
  • Dash of rosemary, basil, parsley, oregano, black pepper, and garlic powder
  • 1/2 cup tomato sauce

Combine 1/2 cup shredded cheese and remaining dry ingredients and mix well. Add olive oil and stir until incorporated.

Drop by heaping tablespoonful onto a parchment paper-lined cookie sheet. Bake “dough” alone for 7-10 minutes at 375 degrees.

Open oven and cover each bite with tomato sauce and remaining 1/2 cup shredded cheese. Continue baking for 15-20 minutes until firm.

Makes 6-8 bites, depending on size.
