A few tips before you get started:

  • Try and always use organic high quality ingredients, especially flour. Organic ingredients produce the best baking results.
  • Use ingredients that are at room temperature. The butter should be soft but not melted.
  • Always opt for butter when baking sponges, particularly in vanilla and plain cakes. Butter adds a surprising amount of flavor.
  • The Creaming Method creates a light and fluffy sponge. Beat the butter and sugar together until it is pale and fluffy. The sugar granules cut holes in the butter, incorporating air and increasing its volume.
  • For gas ovens, keep a heatproof dish full of water in the oven while baking to prevent cakes from drying out.

Vanilla Cupcakes

These beautifully simple vanilla cupcakes are far from boring. They are light, fluffy and packed with delicious vanilla flavor. They will be perfectly flat when baked, ideal for topping with any type of icing, including intricate designs. Recipe makes 12 -14.

Ingredients
How To:
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Use a stand mixer with the paddle attachment on medium speed and beat together the butter, sugar and vanilla extract until it is light and fluffy. This usually takes at least 5 minutes.
  3. Add the eggs one at a time, mixing in each egg entirely before adding the next.
  4. In a separate bowl sieve the flour and add the baking powder and salt.
  5. With the mixer on medium speed, add half the flour mixture to the wet ingredients and mix until completely incorporated. Then add 1/2 cup of milk and continue mixing.
  6. Repeat this process with the other half of the dry ingredients and the milk. Mix for a further 30 seconds until batter is smooth and creamy.
  7. Fill the cupcake liners just over half full.
  8. Bake for 20 minutes until golden brown on top and a skewer inserted into one of the cakes comes out clean.
  9. Allow to cool for 3 minutes and then remove to a cooling rack.

Chocolate Cupcakes

This chocolate cupcake recipe is inspired by a recipe that originally came from the quintessentially British Peyton and Byron bakery. These cupcakes are bold, rich and heavenly. Recipe makes 12 -14.

Ingredients
How To:
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Use a stand mixer with the paddle attachment on medium speed and beat together the butter, sugar and vanilla extract for at least 5 minutes, until it is light and fluffy.
  3. Add the eggs one at a time, mixing in each egg entirely before adding the next.
  4. Turn off the mixer and gently fold in the sour cream.
  5. In a separate bowl sieve the flour and cocoa powder, add the baking soda. Fold the dry ingredients into the wet mixture.
  6. With the mixer on a low speed, gradually add the boiling water.
  7. For a more decadent cupcake, fold in chocolate chips. You can also add nuts or dried fruit.
  8. Fill the cupcake liners half full.
  9. Bake for 25-30 minutes or until a skewer inserted into one of the cakes comes out clean.
  10. Allow to cool for 3 minutes and then remove to a cooling rack.

Buttercream

  2. Gradually beat in half the powdered sugar, milk, then remaining sugar.
