4 New Kitchen Staples
Sometimes change in the kitchen is hard to do. You want to vary your family’s diet or introduce more nutritional powerhouses, but finding a place for them in your meal repertoire is sometimes difficult.
Change doesn’t have to be hard, though! These four new kitchen staples can easily find a place in the kitchen as they are substitutes for items you are already using. Swap them out and enjoy an easy and beneficial change in routine.
1. Instead of Butter, Use Ghee
Ghee is butter with the milk solids (casein and lactose) removed. Butter is cooked until the milk solids foam to the top, then brown and sink. The butter is then strained, leaving only the butter fat. Clarified butter is similar to ghee, but the milk solids are skimmed during the foam stage instead. Because of the extra cooking time, ghee has a slightly nuttier taste than butter and clarified butter.
Ghee is a fabulous cooking fat. Because the milk solids have been removed, the butter won’t burn as easily. The smoke point of butter is 350 degrees F, while ghee and clarified butter have a smoke point of 450 degrees F. Also, because potentially allergenic and tummy irritating casein and lactose have been almost completely removed, it is tolerated by more people.

Try roasting vegetables in ghee or sautéing in ghee instead of butter or another cooking fat. Ghee is also great on popcorn—it won’t make your kernels shrivel like normal butter.
2. Instead of Table Salt, Use Natural Salt
Regular table salt is an industrially processed product that is nearly 100% sodium chloride. Usually an anti-caking agent is added, and some iodine, but regular table salt has been stripped of trace minerals that your body needs—and that makes the salt taste better.
3. Instead of Ground Beef, Use Primal Beef
Primal beef, or whatever your local rancher calls it, is just ground beef mixed with a percentage of offal meat (like liver, kidney or heart). You probably already knew that liver was good for you, but offal in general has super-food properties as well as being rich in vitamins and minerals. Ground beef with organ meat already mixed in is an easy way to sneak these nutritional powerhouses into your recipes.
Substitute Primal Beef in any recipe that calls for ground beef. Use it as a meatloaf base, turn it into taco meat, or grill it in your favorite burger recipe.
4. Instead of Regular Broth or Stock, Use Bone Broth
