If you are on a mission get fit then you know that a good fitness routine and healthy eating go hand-in-hand. Eating balanced meals are one thing, but making sure you are snacking smart is just as important. Snacks are a great opportunity to get in some extra fiber, vitamins, minerals and eating more frequently helps to boost your metabolism, but not any old snack will do! If you are as busy as we are, then you need a snack to eat on the go that doesn’t require a lot of prep but also one that tastes great- and these no bake PB & J energy bites hit all of those marks. They are incredibly easy to make, full of natural and healthy ingredients and delicious- and really that’s the most important part

The key to staying on track with your eating is easy access to nutritious and delicious options. We all know that a bowl of quinoa is healthier than some chips, but if you are running out the door with kids and completely spaced on getting a snack for you (been there!) then those chips begin to look mighty tasty. Enter the energy bite. These compact snacks are absolutely perfect before or after a workout or great for taking when you are on the go. They take almost no time to make, use only whole, healthy ingredients and only require a bowl to make! Oh, and they taste like a peanut butter and jelly sandwich too. Are you sold yet? We are too!

Here’s what you’ll need to make these delicious energy bites

  • 1 1/2 c old fashioned oats
  • 2/3 c unsweetened coconut
  • 1/2 c ground flaxseed
  • 1 T chia seeds
  • 1/2 c natural peanut butter
  • 6 T jam (we used an organic strawberry jam)
  • 1/3 c honey
  • 1 1/2 t pure vanilla extract
  • 3/4 c dried cherries
How to:

Mix together all of the ingredients, except the cherries (use your hands of that’s easier for you). Once combined, add in the cherries and refrigerate for around 30 minutes to make them easier to work with.

Roll them into balls and place on wax paper on a cookie sheet and refrigerated them again for just a bit to be ready to be stored. This recipe makes between 24-28 one-inch energy bites.

These bites are yummy to grab and go and have a nice peanut-buttery taste- your kids may even like them too! They can be stored in the fridge or even frozen. You can make a double batch and freeze some so when you get a busy week, you can be sure to have enough snacks on hand, so you don’t grab something you’ll regret later!

When you are trying to get fit, set yourself up for success by keeping snacks like these at easy access. The flaxseed and chia seeds will help to fill you up and the peanut butter and jelly taste will satisfy your sweet craving, without the guilt!

With smart choices like swapping out an unhealthy snack for something like these nutrition dense energy bites, you will be well on your way to getting fit and leading a healthier lifestyle.
