Chicken Salad Melts

Ingredients:

  • 2 slices of bread, whole wheat or white
  • 1/2 cup of chicken salad
  • 1/2 cup of shredded cheese, OR 2 slices of sandwich cheese (we recommend brie or mozzarella)
  • 2 tbsp melted butter
  • 2 slices of tomato

Steps:

  1. Turn the oven on broil.
  2. White heating a wide, oven-safe pan on low heat on the stove, brush butter onto one side of each slice of bread.
  3. Once the stove is hot, place both slices of bread butter side down into the pan.
  4. Divide the cheese, and place equal amounts of cheese on top of each slide of bread.
  5. Divide the chicken salad and place equal amounts of it on top of each as well.
  6. Place 1 slice of tomato on each side.
  7. Carefully turn off the stove and place the oven-safe pan into the oven to cook the top of the sandwich.
  8. Keep a close eye on the broiling sandwich. When the cheese is melted, and the tomato is warmed, using an oven mitt, carefully remove the pan.
  9. Using a spatula flip one side of the sandwich onto the other so that the tomatoes meet, and remove the sandwich. Slice in half and enjoy.

BLTA Chicken Salad Lettuce Wraps

Ingredients:

  • 1/2 cup plain fat-free Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tsp lemon juice
  • 2 tbsp sliced green onions
  • 1 Tbsp minced parsley

  • 3 cups diced cooked and chilled chicken breast

Ingredients:

  • 6 cups of shredded chicken
  • Tortilla wraps
  • Shredded cheddar or mozzarella cheese
  • 1 cup plain nonfat Greek yogurt
  • ⅓ cup mayo
  • ⅓ cup Frank’s Red Hot Sauce
  • 2 tsp Hidden Valley ranch seasoning and salad dressing powder
  • 1/2 cup carrots shredded
  • 1/2 cup celery diced
  • 1/4 cup scallions chopped
  • salt and pepper to taste

Steps:

  1. Combine the hot sauce, yogurt, mayo, and ranch seasoning in a large mixing bowl. Add a dash of salt and pepper to taste.
  2. Fold in the veggies – carrots, celery, scallions – as well as the shredded chicken.
  3. Lay out a tortilla flat. Spread about 1/2 cup of chicken salad mixture all over wrap with a spatula.

Ingredients:

  • 2 cups rotisserie chicken, shredded
  • 1 cup finely diced pineapple, fresh or canned
  • 1/2 cup chopped celery
  • 1/4 cup sliced almonds
  • 2 tablespoons fresh chopped cilantro
  • 2 tablespoons finely diced red onions, optional
  • 1/2 cup plain FULL FAT Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/2 tsp kosher salt
  • 8-12 lettuce leaves
  • 4 croissants, sliced in half

Steps:

  1. In a large mixing bowl, stir the pineapple, celery, almonds, and cilantro. Add your red onion here if you are using them.

Steps:
