Sweet Tomatoes Recipes for Tomato Soup
Ingredients
- 3 Tablespoons margarine
- 1/2 lb onions, diced
- 4 oz carrots, diced
- 4 oz celery, diced
- 1 clove garlic, minced
- 2/3 cup white flour
- 1 1/2 quarts water
- 12 oz crushed tomatoes
- 5 oz tomato paste
- 1 1/2 oz white sugar
- 1 1/2 oz vegetable base
- 1 tsp black pepper
- Bay leaves, wrapped in cheesecloth
- 11 oz heavy cream
Recipe
In a large soup pot add margarine, onions, carrots, celery and garlic. Sauté for 15 minutes. Add flour to the soup pot and mix. Cook for 10 minutes, stirring occasionally. Add water to the soup pot and stir for 5 minutes, or until smooth. Add ground tomatoes, tomato paste, sugar, vegetable base and black pepper to the soup pot. Stir for 5 minutes or until smooth. Add bay leaves to soup and heat to 200º. Reduce heat and simmer for 20 minutes. Remove bay leaves. Turn off heat and add heavy cream. Stir to combine evenly.
