8. INSTANT POT PEACH COBBLER BY AILEEN COOKS
This recipe is packed with flavor and you can easily swap out a few ingredients to make it a tad bit healthier. Use Erythritol instead of granulated sugar; 1/8th a teaspoon of Glucomannan instead of cornstarch; and almond flour instead of all-purpose flour. If you have access to an all-purpose gluten free flour, such as Bob Mill’s All Purpose Gluten Free Flour, you could use that in place of the regular flour as well. The topping was a bit crumbly but otherwise tasted sweet. It is so good you’ll feel like you’re cheating on your weight loss plan.

Please remember that not all thickening agents are created equal. Glucomannan and Xanthan Gum require significantly smaller amounts than cornstarch. It’s best to add a little at a time.

For this dish, you can swap out the brown sugar with Swerve brown sugar and won’t even tell the difference. 15. 5 MINUTE HEALTHY INSTANT POT CHOCOLATE PUDDING BY RECIPES TO NOURISH
There is nothing better than chocolate! And while chia puddings are all the rage – nothing is wrong with that. Here is a guilt-free chocolate pudding! Since the recipe calls for “milk of choice,” you can use unflavored almond milk or coconut milk. The only additional piece of equipment needed is 1/2 pint glass jars.
