Cashew Date Energy Bites 1 Daily Mom, Magazine For Families

Not all snacks will appeal to both moms and babies – hello puffs! – but these energy “bites” are a great snack to share with your little one. At approximately 120 calories and 3 grams of protein per ball, these are a great snack for on-the-go kids or little ones needing a filling snack to tide them over to their next meal. For moms who fall prey to the all-carbs-all-the-time diet that is so easy when you’re home all day, these bites are a quick and easy way to fuel your body during the long stretch between lunch and dinner.

Ingredients

  • 5 pitted dates
  • 20 raw cashews
  • 4 tbsp sunflower
  • 1 tbsp chia seeds
  • 3 tbsp almond butter

Using a food processor or strong blender, grind the first three ingredients into a coarse meal. Stir in chia seeds. Finally, add almond butter. Mix (with a spoon or your hands) until all ingredients are combined into a thick batter-like consistency.

Form into approximately 10 one-inch round “bites”. Chill in refrigerator until firm.
