Whether you are hosting a Halloween party in your home or simply need to fuel your family before a night of trick-or-treating in the neighborhood, you want something fun and festive, but we also know you don’t want to compromise your family’s healthy eating habits (aside from the candy they’ll collect!).
We’ve discovered Explore Cuisine’s Organic Black Bean Spaghetti, and tried out some of their Halloween-inspired recipes. Boasting 25 grams of protein per 2 oz serving, and containing only organic black beans, this pasta is rich in flavor, super healthy, and most importantly, the perfect colored base to your Halloween night dinner. Trust us, you’ll want to try out both of these spooky recipes for yourself!
Organic Black Bean Spaghetti With AFRAID-O Sauce And Carrot Finger Bones
Ingredients
- 1 box of Explore Cuisine Organic Black Bean Spaghetti
- 8 white carrots
- 1 jar of Alfredo Sauce
- 1 jar of Marinara Sauce
- Fresh basil (to garnish)
HOW TO PREPARE DISH:
- Cook and drain pasta according to box (and how you prefer).
- Peel the carrots, and then cut and carve to look like finger bones.
- Heat the Alfredo Sauce and Marinara Sauce in separate saucepans.
- Place pasta on serving dishes.
- Ladle Alfredo Sauce over the pasta.
- Scatter carrot “bones” about the plate.
- Splatter Marinara sauce about the plate to look like blood splatter.
- Garnish with basil.
Garlicky Organic Black Bean Spaghetti Spoons With Deviled Eyes
Ingredients
- 1 box of Explore Cuisine Organic Black Bean Spaghetti
- 8 hard boiled eggs
- 2 garlic cloves, minced
- 2 T of organic olive oil
- 1 T fresh herbs of your choice, finely chopped
- 1 T of cooked egg yolk, grated (can get this from your hard boiled eggs)
- Salt, to taste
- Red chili pepper flakes, to taste
- A few drops of food coloring (color of your choice)
- 4 jumbo black olives
- 1 T of garlic mayonnaise
- 1 envelope (about ¼ oz) of unflavored gelatin (there will be some left over)
Equipment
- Two sharp thin tubes for cutting hard-boiled egg into (1) the size of an iris and (2) into the size of a pupil
- Fine tip paint brush
- Pastry brush
HOW TO MAKE DEVILED EYES:
- Use the larger tube to cut the top of the egg in a circle for the iris. Remove the egg white plug. Paint the egg white plug with diluted food coloring to look like an iris. Let dry.
- Use the smaller tube to cut out a place for the pupil in the painted iris. Use the same tube to cut a pupil out of the black olive. Place the olive pupil into the iris.
- Cut off the bottom third of the egg so it will nestle in the spaghetti spoon. Reserve any hard-boiled egg yolks for spaghetti recipe.
- Scoop out a small amount of the egg yolk from the top of the egg to make room for mayonnaise. Squirt garlic mayonnaise into the hollow top of the hard-boiled egg, and then replace the iris plug.
- Paint food coloring bloodshot lines around the iris. Let dry.
- Finish by brushing a light coat of slightly thickened gelatin glaze over the entire eye to give an authentic glossy finish.
HOW TO PREPARE DISH:
- Cook pasta to your liking, and drain water.
- In a medium bowl, combine olive oil with garlic, herbs, salt and chili flakes. Add spaghetti and toss. Sprinkle with grated egg yolk.
- Place spaghetti in decorative serving spoons or small bowls.
- Place deviled eyes in center of spoons or bowls.
