Endive Boats: The Fun Alternative To Summer Salad

With summer quickly approaching, you’re probably daydreaming about neighborhood cookouts on warm, sunny days, potluck dinners with friends and family picnics at the park. From grilled hamburgers and corn-on-the-cob to Aunt Edna’s award-winning potato salad, the one thing they all have in common is tasty summer eats. If you want to impress your friends and family at your next get-together with a refreshing alternative to your usual tossed salad, try these fun and scrumptious Endive Boats.

What you’ll need:

  • Endive Leaves
  • Crumbled Blue Cheese
  • Walnuts
  • Cubed Mango
  • Cubed Avocado

The great thing about this salad is that it can be presented two different ways. You can chop all of the ingredients and mix them together like a tossed salad.

Or you can use the individual Endive leaves as boats and fill each one with the other ingredients; and they instantly turn into tasty finger food or fancy hors d’oeuvres.

The mango adds just the right amount of sweetness and juices, that a dressing is not necessary. However, if you still feel you need a little more moisture in this delectable combo, a Strawberry Vinaigrette is the perfect compliment.

You will be amazed at the harmony of flavor these ingredients produce, and your friends will be impressed when you bring this dish to your next get-together!
