Cinnamon Zucchini Muffins

Zucchini Muffins

Sometimes the best recipes are a result of ingredients in the fridge which taunt you with “use me!” every time you open the fridge. These easy, sugar-free muffins are one such recipe and are a great one to make with your kids in the kitchen. Plus, the recipe lends itself to whatever “tweaking” you and your little chefs might want to make!

Ingredients

  • 1 medium green zucchini, shredded
  • 1 tbsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1/8 tsp. ground nutmeg
  • 2 tsp. baking powder
  • 2 tsp. flaxmeal
  • 2 c flour
  • 1/3 cup plain yogurt
  • 2 eggs
  • 1/2 c almond milk + 4 tbsp.

If you want to get creative, try adding pureed fruit, chia seeds, nuts, nut butter, or dried fruit.

  • Mix all ingredients together in a large mixing bowl until a batter is formed. Spoon into muffin tins and bake for 15-18 minutes at 375 degrees.
  • Makes 14 muffins.
