Maple Cinnamon Animal Crackers

There’s a certain kind of animal cracker that comes in a red box with zoo animals on it which finds its way into many diaper bags for on-the-go snacks. Unfortunately, these animal crackers also come with corn syrup and the always-mysterious “natural and artificial flavors,” making them more of a sometimes snack instead of an all-the-time snack.

Here is a much healthier recipe that tastes delicious and contains some powerful ingredients like cashew flour and coconut oil. Additionally, your little ones can help you cut the dough into fun shapes and while you’re eating, you can incorporate lessons like what sound each animal makes, where you might see each animal, and what each animal looks like in real life.

Ingredients:

  • ¾ cup buckwheat flour
  • ½ cup cashew flour (approximately ½ cup jumbo cashews, ground)
  • ½ cup unbleached flour
  • 1 tbsp. flaxmeal
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 tbsp. melted butter
  • 3 tbsp. maple syrup
  • 2 tbsp. coconut oil
  • ¼ cup +2 tbsp. almond milk

Coral Large Separator

Combine all dry ingredients and mix until combined. Add vanilla, melted butter, maple syrup, coconut oil, and almond milk and stir until a moist dough forms.

Refrigerate dough for 30-60 minutes until firm.

Roll out dough on a very well-floured surface. Use cookie cutters of your choice – Daily Mom loves these Fox Run Mini Cookie Cutters – to make fun, finger-friendly shapes.

Bake at 375 degrees for 13-15 minutes or until firm.
