Taco Tuesday: 6 Easy Twists on a Weekday Favorite

Taco Tuesday! So much fun to say, but after several weeks in a row with little to no variation, what once was novel becomes mundane. It’s time to spice up your Tuesday night repertoire! We’ve gathered six delicious Tex-Mex recipes (including three soups) that will get dinner on the table in no time at all, won’t make too many messy dishes, and will satisfy everyone’s taste buds!

1. Easy Taco Soup


Why don’t we start with something easy? So easy, that even the non-cooking moms can handle it. Rather than picking up a taco kit from the grocery store, you’ll be grabbing a few canned vegetables, a pound of hamburger and some corn chips. Easy peasy!

2. Fajita Chicken & Pinto Bean Soup


This spicy soup is packed full of protein and flavor! The recipe makes about 8 servings, so you will likely have leftovers. That’s actually a good thing, as the flavor only gets better after all the seasonings marinate overnight! Because all the ingredients go into the pot at once, you can easily make this dinner in the crock pot too; just dump it all into the crock pot and set it to low for 6-8 hours, or high for 3-4 hours (everything is fully cooked, you just need to tenderize the veggies).

3. Little Chippies


These tiny little vegetarian tostadas can be totally customized, so even the pickiest of eaters will be happy! Bonus: start to finish, this meal takes less than 15 minutes and it’s super cheap! Plus, most of the ingredients you’ll probably already have on hand, so it’s a great last-minute meal for those days when the pantry is getting bare. To further entice choosy eaters, serve all of the optional toppings buffet-style on the dinner table and let them load up their Little Chippies however they choose!

4. Lentil Taco Filling


Quick, easy and packed with plant-based protein, this lentil taco filling comes together in less than 15 minutes thanks to canned lentils. While this filling is superb in crunchy or soft tacos, we love the idea of scooping it onto a baked potato for a fun twist! It would even be delicious paired with rice in a tortilla wrap, garnished with sliced tomatoes and lettuce.
